RECIPE: Millionaire Shortbread

So after a while of pushing this back, I finally decided to make these Millionaire Shortbreads.




What you will need:

A traybake style tin, like a brownie tin

Greaseproof paper

  • 185g unsalted butter (shortbread)
  • 80g caster sugar
  • 250g plain flour
  • 185g unsalted butter (caramel)
  • 80g caster sugar
  • 3 tbsp golden syrup
  • 300g sweetened condensed milk
  • 150g milk chocolate ( I used Green & Blacks)





Line your tin with the greaseproof paper and preheat your oven to 180c

Put your butter, sugar and flour either in a bowl and mix or into a mixer/ food processor and beat until you have dough. It will take longer by hand!

Turn out into your tin and press in and then bake for 25 minutes until just golden.

Whilst this is happening you can start on your caramel.

Add your sugar, butter and golden syrup into a pan and leave to melt, once this is done and the sugar has dissolved turn up the heat and boil the mixture. BE VERY VERY CAREFUL THIS WILL BE HOT!!

Once the shortbread has cooked, remove from oven, and the your can add your caramel.

Leave to completely set for about an hour

Melt your chocolate and then again add on top of the caramel- again leave to set completely. You could even chill it to speed the process!

Then slice as you wish and enjoy!

RECIPE: Raspberry Chocolate Brownies

Hey peeps!

Need to stop being a lazy bum, and get myself back on this.

So, I thought I would post my take on homemade Brownies- (that’s non box cake mix to you lol).

You will need:

  • 1 deep brownie tin/ pan
  • 200g 70% dark chocolate
  • 200g unsalted butter
  • 3 large eggs
  • 275g caster sugar
  • 80g self-raising flour
  • 30g cocoa powder
  • 150-200g fresh raspberries (you can leave these out if you do not want to use them)
  • can of spray ‘grease’ or butter to stop the batter from sticking



Preheat your oven to 180c

Fill and boil your kettle too.

You need to then ‘create’ a bain marie which basically to us, means a bowl over a pan filled with water…You need to make sure the base of the bowl does not touch the water!!


Put the chocolate and butter and allow to mix and melt. Be careful here.

Grease your tin- you could also line it with greaseproof paper if you wanted.

Crack your eggs into a large separate bowl along with the sugar and whisk until pale and fluffy.

Once the chocolate mixture is completely melted, remove off the heat for a few minutes, then pour into your egg and sugar, you must make sure you fold NOT mix!

Sieve your cocoa and flour into the brownie mixture and again fold through some more.

– you can now add your raspberries if you want to –

Tip everything into your tin.

Bake in oven for about 25 minutes or so, you are looking for dense, slightly undercooked brownie.

Leave to cool completely before turning out and slicing!

January Favourites


So the first month of the year is almost out.. yippee!



Which brings me to this months favourites:

My K by Myleene Klass- if your not aware if the many new trends of SS17′, then your missing out. Along with Embroidery, Badges, and now ‘unisex’ clothing. Yes monochrome, for babies is IN.

Solstice Highlighting Palette by Sleek- probably for me the most affordable and popular highlighting palette around, if you are unable to stretch to say Anastacia Beverley Hills.

Fibre One Bars- Honestly, these are so tasty! If your on a diet, and just craving a chocolatey hit, then try one of these. They are 90 calories, and come in 3 flavours. Chocolate Fudge Brownie, Salted Caramel Squares and Lemon Drizzle Bars.

Prep + Prime Transparent Finishing Power by MAC- if you are like me and by lunchtime your a little bit shiny, or you find your makeup doesn’t look as great as it did when you first put it on that morning, then look no further to MAC Prep + Prime Transparent Finishing Powder. I find this makes your makeup stay all day, and you can use is sparingly if needed. It doesn’t make your face go all cakey like a lot of powders do either. Use it with a damp sponge or beauty blender to “bake”, or with a fine brush.

Estee Lauder Double Wear Foundation- my holy grail foundation! It has taken a long time to find a foundation that matches my skin perfectly, and stays on ALL DAY long, it does not wear away, slide or look patchy or cakey either.

When your thinking of ways to transform your living room into a 3rd bedroom, at an in-godly like hour in the night…

As currently neither the older boys can really cough, breathe or fart without the baby waking and crying.

So last night we made it till crappy old 1am and Marcus is onto his second feed of the night and now will be back in his tiny poxy Moses basket at the foot of our bed. So we cannot even cough, breathe or even fart!- just to specify, I don’t ever do the latter, I’m a lady…

There must be a way for 3 boys to sleep in unity surely. No?

So whilst Daddy sleeps beside me, and Marcus is smiling, as he is milk drunk on me, I’m looking bemused and damn hungry.

Life of a Mummy eh?

When 4 becomes 5…

It’s been a while since there has been utter chaos in the house, and I have to admit at times it can be completely overwhelming, but honestly, it is so worth it.

If you are not aware of the logistics of my blended family, then that’s ok. I keep forgetting everyones names too! Doh!

Who are we?

So at the top of the table, we have Allen. The breadwinner, best friend, supporter and best daddy / partner I could ask for.

Next, we have Max, my firstborn, my eldest son, happy, very tall and always asking questions about life day to day…and obsessed with Lego!

Then we have my Mason, (or Mace) and he is my squidgy, dinosaur mad middle son, of which he didn’t have a first word… it was more of a roar! He carries a dinosaur of some description wherever he goes.

Then at last and most recently, we have Marcus. Born in August 16′, he is certainly no shy guy, you really do have your hands full with him! Little bit of a rough start in life, but finally trebling in weight by the day, and almost showing early signs of crawling. My goodness!

So that leaves me. My name is Claire, and I am a proud mummy. Life hasn’t been that easy this past few years, but I think finally I am happy to say that I am looking forward to the next challenges that lay ahead. Even if that does mean turning the dreaded 30 in September.

So why write a blog?

To the people who know me well, I am a very chatty individual. I am generally 9 times out of 10, a smiley, happy soul.

I am very creative, be it with cooking, baking, decorating (mind you, I leave the hard painting and building to Allen, but I know what looks good where etc..), I am always looking at new trends whether it be with fashion, high street or otherwise, and beauty. Beauty and all things pretty is my forte and don’t forget the glitter!!
