Recipe: Smoky BBQ pork with beans and sides

Thought I’d update and share this recipe which can be found in October 18′ Good Food magazine out now!

Serves 4 easily with leftovers

  • 2 tsp fennel seeds
  • 2 tsp smoked paprika
  • 500g pork mince
  • 2x 350g passata
  • 2 tsp garlic purée
  • 400g drained black beans or borlotti beans
  • 100g really good quality bbq sauce

Method.

Set up a slow cooker or crock pot and place on the low setting.

Heat a saucepan with a little olive oil and add the fennel seeds.

After a minute add the pork mince and allow to cook for a couple of minutes so nice and brown.

Add the paprika, purée, passata, beans and bbq sauce and mix throughly well.

You could leave to simmer for 30 mins and then it’s done or you could transfer to your slow cooker and leave for as long as you need too.

The longer the better…

Served with grated cheese, French bread or brioche buns, salad and guacamole! – you could have this with rice too.
